INGREDIENTS
- 1 ½ cups old fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 egg
- 1 cup almond milk
- 1 mashed ripe banana
- 2 teaspoons coconut oil
Directions
- Use food processor to grind oats until they are a flour like consistency
- Add oat flour, baking powder and cinnamon to a medium sized bowl
- In a small bowl, mash the banana
- Add the egg to the banana and whisk together
- Add the vanilla and almond milk to the banana mixture and whisk until smooth
- Pour the wet mixture in with the oat flour and stir until combined
- Heat a skillet over medium heat and melt the coconut oil
- Use a ¼ cup measuring cup to scoop the pancake batter on to the pan
- Cook pancake until you see bubbles on the surface (about 3 minutes) and flip over and continue cooking until the bottom has a golden brown color
